Signed, Sealed, Delivered! Mailing Celebration Blondies

My soon to be sister-in-law wanted to try out my wedding veil with her dress. Since I’d be mailing it to her, I decided to send it along with some Celebration Blondies! These delicious bars are great for all kinds of celebrations, and while I used rainbow sprinkles, you could use any color or dye the frosting to make this work for a holiday themed treat, a sports team, or whatever your creative mind can muster! This was also my second time attempting to mail baked goods. I’ll share the recipe and mailing tips below, so read on!

Ingredients

Brownie

5 oz (10 T) unsalted butter
12 oz white chocolate chips (half a standard bag)
1 ½ C all purpose flour
1 ¼ t vanilla extract
1/2 t salt
¾ C sugar
4 large eggs
1/8 C rainbow sprinkles
pan spray

Frosting

2 2/3 C powdered sugar
3 (6T) oz unsalted butter (very softened)
2 t vanilla extract
4 T whole milk
rainbow sprinkles to decorate

Directions

Brownie: In a microwave safe bowl, combine the butter and white chocolate chips.  Melt in the microwave, watch carefully and stir often to prevent burning.  Whisk together the eggs, sugar and vanilla until combined. Stir in the melted chocolate mixture then add the sprinkles.  Add the flour and salt and stir just until combined. Pour batter into a 9 x 13 greased pan.  Bake at 325° approx. for 25-30 minutes until the edges start to brown.

Frosting: Cream the softened butter and powdered sugar until smooth. Add the vanilla.  Next add whole milk just until spreading consistency. If too thick, add milk little by little until spreadable.  Spread evenly over cooled brownie, finish with sprinkles.

Tips for mailing baked goods

When mailing baked goods, cookies or bars make a good choice because they can be individually wrapped. If there is any frosting or glaze, package it separately and your recipient can frost them on the other end! To preserve freshness, cut the bars ahead of time and wrap each cookie or bar in plastic wrap to preserve freshness. I then put the bars in a Tupperware container and sent it on its way!
